Discover the deep umami of our handcrafted Soy Sauce (Shoyu), made with soybeans/Emmer Koji, an ancient grain grown in the Netherlands. Fermented and aged traditionally in barrels, this Shoyu offers a rich, savory flavor with nutty notes, and gentle sweetness from secondary fermentation with Emmer Koji itself, perfect for enhancing any dish.

We strive for a shortened supply chain, directly sourcing ingredients from local organic farmers and producers. Here’s the origin and supplier of our ingredients:
- Soybeans from the Netherlands (NL-soja)
- Emmer wheat from the Netherlands (Zonnespelt)
- Salt from France (Trad Y Sel)
- Authentic Koji spores directly imported from Japan (Hishiroku/Akitakonno)
Shelf life: 1 year after opening when stored in the fridge.

Returns
